The Battle Cats: Epic Catfruit is the evolution bottleneck
Epic Catfruit is in 147 of 302 True and Ultra Form evolutions. Blue Catfruit is the biggest pile by count, but Epic is the one that keeps Cats waiting.
Epic Catfruit appears in 147 of the 302 True and Ultra Form evolutions in The Battle Cats — 49% of them, and more than any other material by a wide margin (Blue Catfruit is next, in 111). It is not the material you need the most copies of. It is the one most likely to be the single thing between you and a finished evolution.
Total demand across every evolution
Add up every evolution's recipe and you get the real weight of each material. The eight biggest:

The top six are the five colour Catfruits plus Epic, and they sit remarkably close together: 409 to 454 copies, a gap of only 45. No colour is safe to ignore if you plan to evolve a wide roster. Across every recipe there are 29 distinct materials, counting each Catfruit, Seed, Behemoth Stone and Behemoth Gem separately.
Why "most copies" and "most evolutions" are different questions
Blue Catfruit tops the copy count at 454 because some recipes ask for it in bulk. Epic Catfruit ranks only 4th by copies (427), but it is spread across far more recipes — most often 3 per Cat (63 recipes ask for exactly that many). That is what makes it the bottleneck: each colour turns up in 102 to 111 recipes, so running short of one colour stalls roughly a third of the list, while running short of Epic stalls almost half of it.
If you can only stockpile one Catfruit ahead of time, stockpile Epic. It is the missing ingredient in more evolutions than anything else.
Where Epic Catfruit actually drops
The 4 colour Catfruit stages (Blue Illusion, Rays of Gold, Red Passions and Violet Flash) are the obvious place to farm fruit, and Epic Catfruit is on every one of them — as a rare side drop:

Even on Insane, the stage's own colour drops about 21 times as often as Epic. So farming the colour stages and hoping Epic falls out is the slow road. The dependable sources are the stages that list it as a guaranteed drop: Acts of Cat-God (Insane), Doom Paradise (Insane) and Space is the Place (Insane). True Forms, Ultra Forms, and the XP bill
The list splits into 280 True Forms, unlocked at Lv.30, and 22 Ultra Forms, unlocked at Lv.60. They run on different materials. 145 of the True Forms need Epic Catfruit and only 45 need a Behemoth Stone or Gem. Every one of the 22 Ultra Forms needs Behemoth material, and only 2 ask for Epic Catfruit. If you are chasing Ultra Forms, the Behemoth Culling stages matter more than Catfruit: they hold 284 of the 341 Behemoth Stone drops listed.
Experience is the other half of the bill. The most common True Form price is 1,000,000 XP (172 of them), and every Ultra Form costs 2,000,000 XP. The most expensive single step costs 3,000,000 XP. Taken together, every True Form costs 218,540,000 XP and every Ultra Form another 44,000,000. That XP comes from the same pool you level Cats with, so a long evolution queue competes directly with levelling.
